I have been in Mexico full-time for 4 years and buy most of my veggies in little stands. I have never done more than rinse with fresh water and a little brush and so far I haven't had a problem. Maybe it is true that if you expose yourself to as many germs as possible you build up more immunities. I think everyone has different levels of tolerance to things.
