Wash your veggies!
A very important way to stay healthy here is to wash your vegetables. Actually, that's sage advice no matter where you live. However, since it's been estimated that up to 40% of travelers to Mexico have their vacations interrupted by some form of stomach problem, it's even more important to wash your veggies here.
Thankfully that is a relatively easy task. In the fresh produce aisles of most markets you can usually find a bottle of Microdyn close by. Microdyn can be used to wash your vegetables, purify your water, and sanitize your eating utensils. If you can't find this chemical or something similar in the fresh produce aisle, plain old bleach will do the trick too.
The bottle of Microdyn tells you to submerge the produce for 10 minutes in water, with a ration of 8 drops of Microdyn per liter. No rinsing necessary. If you are treating water, add one drop per liter and let it stand 15 minutes.
With bleach the general rule for produce is 10 drops of bleach per liter and let it stand 5 minutes. You might want to rinse the veggies afterwards. For water the ratio is 2 per liter and a 15 minute wait.
It's a simple precaution, but it can make a major difference on how much you enjoy your vacation!

I think everyone has different levels of tolerance to things. I have been in Mexico full-time for 4 years and buy most of my veggies in little stands. I have never done more than rinse with fresh water and a little brush and so far I haven’t had a problem.
Maybe it is true that if you expose yourself to as many germs as possible you build up more immunities.
